Collection: Cédric Bouchard

For Cédric Bouchard, the philosophy can be summed up in one sentence: one plot, one vintage, one grape variety—never any blending, never a fixed recipe. Under the name Roses de Jeanne, he vinifies in Celles-sur-Ource, in the Côte des Bar, where his parcel-based approach to Champagne has become a benchmark far beyond the region.

Les Ursules, a foundational plot of about 0.9 hectares planted with Pinot Noir, illustrates this rigor: only the first press is used, fermentation occurs with indigenous yeasts in stainless steel tanks, and the wine spends several years on lees before being disgorged with zero dosage. Precision above all else.
