Collection: Déhu Père et Fils Champagne

Benoît Déhu produces terroir-driven bubbles in the far west of the Marne Valley, in the village of Fossoy, a region clearly dedicated to Meunier. He is the first of his generation to vinify his own grapes, having started in 2011 with organic certification, then moving to biodynamic practices with a horse in the vineyards; the estate now covers 4 hectares. His love for oak comes from his time at Bollinger, and his raison d'être can be summarized as: Meunier, oak, and aging—reminiscent of another estate in the region, La Closerie. Another dogma, that Meunier cannot age, has also been debunked, as has the idea that the "taille" (the second pressing) cannot age—which is why in 2012 he released a 100% taille cuvée aged in barrels called "La Petite." However, he uses everything, as it is an integral part of the wine. His wines are characterized by an absence of malolactic fermentation (blocked by sulfur) and dosage, carried by such incredible juiciness that this is made possible.
