Collection: Savart + Prevost

Éphémère No31 champagne

is a collaboration between Frédéric Savart of Écueil and Jérôme Prévost, the man behind the La Closerie estate in Gueux—both of whom have a rather uncompromising approach to terroir and low dosage. It is 100% Chardonnay from the Grand Cru Avize in the Côte des Blancs with a recipe featuring a 1 g/l dosage, grown by the small family producer Drémont Père & Fils (Sillery, Marne Valley)—the duo therefore simply designed the terroir and the philosophy.

Savart is a Pinot Noir man, Prévost a Meunier man; this involves a new grape variety and a different "land," so the project aims to showcase their winemaking experience, but on unfamiliar ground.

The series is conceived as a set of small, unique cuvées, with Savart as the conductor selecting the plots, vintages, and growers, here with Jérôme as a pillar, friend, and student of Selosse, now known for having reinterpreted Meunier in Champagne as if it were a great Burgundian grape variety. The cuvée exists in 2016 and 2019 versions; the 2019 has just been disgorged—both cuvées are, of course, produced in very limited quantities.

Both vintages are therefore Blancs de Blancs—made with organically grown grapes from the Grand Cru Avize. They are fermented and matured in old 228 l barrels and 600 l demi-muids, for micro-oxygenation rather than taste. The 2016 vintage is then aged for 9 years on lees in the bottle and disgorged in March 2026 as an Extra Brut with only 1 g/l.
