Pascal Doquet Arpège, Blanc de Blancs, Premier Cru

Arpège is a Premier Cru Blanc de Blancs, 100% Chardonnay from Vertus, Villeneuve, and Mont Aimé, in the south of the Côte des Blancs. The name is musical, but its construction is very concrete: multiple chalky terroirs, a perpetual reserve started in 2012, and aging that combines wood and enameled steel.

Fermentation with indigenous yeasts, complete malolactic fermentation, no fining or filtration, and zero dosage for this Brut Nature version. The wine gains depth thanks to the reserve and time on the lees, yet remains taut and very dry. At Doquet, complexity never comes from artifice.
