Romain Hénin Odyssée Pétillante – Chapter 2

L'Odyssée Pétillante Chapter 2 chronicles the 2023 harvest for Romain and Thomas Hénin. The blend brings together 50% Meunier, 40% Pinot Noir, and 10% Chardonnay, a composition dictated by a rainy vintage that required strict sorting and a comprehensive assessment of the estate's various plots.

The work is done entirely by gravity, with spontaneous fermentation using indigenous yeasts, without fining, filtration, added sulfur, or any other inputs. The wines spend approximately one year in barrels and casks before the secondary fermentation. Disgorged with no dosage, the cuvée is Brut Nature: ample, mouth-watering, and tense, with all the energy of a "0-0" champagne that seeks no correction.
