Collection: André Clouët
In Bouzy, the André Clouët estate has been cultivating Pinot Noir since 1741 and has turned it into a doctrine: Jean-François Clouet likes to speak of "pinotisme," the art of making this grape variety express itself on the chalk of Bouzy rather than blending it away. The wines ferment plot by plot, undergo malolactic fermentation, and age for a long time, often in old Sauternes barrels, before spending a lengthy period on lees. The style is rich, creamy, and somewhat traditional in the best sense of the term—fruit freshness underpinned by structure. From the zero-dosage Silver Brut Nature to Un Jour de 1911, aged for over ten years in the cellar, the estate embraces an uncompromising Pinot Noir.
