Benoît Lahaye Rosé de Macération

Benoît Lahaye's Grand Cru Rosé de Macération comes from the Les Juliennes parcel in Bouzy and is based entirely on Pinot Noir. The whole clusters macerate briefly with their skins to extract color, aroma, and a tannic structure that gives the wine its character.

Fermentation takes place with indigenous yeasts, followed by aging on lees in barrels and clay jars. A light dosage completes the cuvée. More vinous than decorative, this rosé speaks of Bouzy before it speaks of its color.
