Pierre Gerbais Champ Viole

Champ Viole is a parcel-based Blanc de Blancs, 100% Chardonnay from the Champ Violé "lieu-dit" in Celles-sur-Ource. South-facing on Kimmeridgian marl and limestone, this historic terroir gives the Chardonnay a sunnier maturity without losing its chalky profile.

The cuvée is based on a perpetual reserve started in 2011. Hand-harvested, natural and malolactic fermentation in vats, approximately 10 months on lees, neither fined nor filtered, then approximately 36 months on laths. Extra Brut with very low dosage. A Chardonnay that leans readily toward Chablis.
