Collection: Illegal immigrant

Clandestin is Benoît Doussot's laboratory in the Barséquanais region. The principle is almost scientific: grouping plots with "similar" exposures on Kimmeridgian clay-limestone soils to make their differences readable in the glass—North for Boréal, South for Austral, both 100% Pinot Noir.

Les Grandes Lignes, meanwhile, isolates a single Chardonnay plot of about 38 ares on Portlandian chalk. Throughout, the same method: indigenous yeasts, aging in barrels or demi-muids, no filtration, no dosage. A precise, almost experimental reading of the Côte des Bar.
