Collection: Piollot

In Polisot, in the Côte des Bar, Piollot cultivates Pinot Noir on the Kimmeridgian marls and limestones that also contribute to the reputation of Chablis. The Cuvée de Réserve blends Pinot Noir and Chardonnay with half reserve wines; Come des Tallants, a single-vineyard wine, comes from a plot planted in 1980 and is aged for four years on lees with no dosage. The estate extends its work with Pinot Noir to still wine, with Les Petites Mains, and to ratafia, with the Vieux Ratafia "Le Cabaniste," aged for five years in oak barrels.
